Al Makhzan

Al Makhzan

Restaurant operations, simplified.

Project overview

A complete restaurant management platform tailored for Tunisian and MENA operations — from tableside ordering to supplier management.

Al Makhzan is a restaurant operations platform built for the realities of Tunisian and MENA kitchens. We replaced spreadsheet-driven workflows with a single source of truth that handles orders, inventory, and suppliers on the same screens used by the floor staff.

Al Makhzan — al-makhzan.com

Al Makhzan started after watching a friend's restaurant lose a whole night of orders to a broken POS terminal — the kind of failure that punishes operators in markets where global tools quietly assume always-on connectivity. We rebuilt the workflow from the ground up: tablets that work without internet, supplier history that survives device swaps, and an interface in Arabic and French that the floor staff actually wanted to use.

Problem

Mid-size restaurants in Tunisia were juggling paper tickets, WhatsApp orders, and disconnected suppliers. Stockouts, mispriced invoices, and end-of-month reconciliation took days. Existing global POS tools assumed stable internet and ignored local payment rails.

Solution

A multi-device platform that runs from a single tablet on day one and scales to multi-station kitchens, with first-class offline support and supplier integrations tuned to local logistics.

  • Tablet-first point of sale with table maps and split bills
  • Live ingredient inventory that deducts on every order ticket
  • Supplier order history, price tracking, and digital receipts
  • Offline mode with conflict-free sync when bandwidth returns

Result

Running a restaurant became calmer and easier to control

With orders, stock, and suppliers on the same screens, restaurant teams stopped chasing paper tickets and spreadsheets and started seeing their numbers while the service was still running.

  • ≈40% less time spent on weekly stock reconciliationIngredients are deducted on every order ticket, so the weekly count confirms the numbers instead of rebuilding them by hand.
  • 0 lost tickets since offline order capture went liveWhen the connection drops in the middle of a busy service, orders keep coming in and sync as soon as it returns.
  • 100% local dinars, Arabic and FrenchPrices, invoices and stock are kept in Tunisian dinars, on screens and menus the floor staff read in their own language.
  • 1 tablet to start with room to grow into multi-station kitchensA restaurant can open on a single tablet and add stations as it grows, without switching systems or losing its history.
